In order to convey the appeal of Japanese tea and the way to best enjoy it, we offer the “OMOTENASHI dining scene with green tea” in 1899’s original style.

Head chef Masafumi Okubo

  • Head chef  Masafumi Okubo
  • A graduate of the Musashino Cooking School, the head chef hails from Saitama Prefecture.
    After training at including a stint at a restaurant serving blowfish, he joined Ryumeikan.

    In 2014, he became a head chef at “Hanagoyomi Tokyo” in Tokyo’s Chuo Ward. He was also involved starting “RESTAURANT 1899 OCHANOMIZU” and became the head chef on August 1, 2014. He has a passion to create new Japanese cuisine featuring green tea beyond the concept of green tea as a beverage.
